Well I took recipe and added a little twist. I added chia seeds, oats and collagen peptides! I basically dumped even parts of the 3 things into a blender and blended it into sand/powder consistency. Then I added 1 cup of this mixture to the recipe and cut down the flour. Adding these extra ingredients increases bake time by 5-10 minutes. The kids loved it and they couldn’t tell it was fortified with extra protein and omega 3!
They roll out of bed looking so cute. Lucky kids.
Ingredients (Makes a dozen):
1 1/2 cups cake flour
1 cup of chia/oat/collagen peptides powder
1/2 tsp baking soda
3 tablespoons unsalted butter, room temperature
2/3 cup sugar
2 large eggs
1/2 tbsp vanilla extract
10 ounces Greek yogurt
Generous amounts of chocolate chips
Preheat oven to 375°F. spray muffin tin with oil.
Cream the butter and sugar on medium setting until thoroughly combined.
Beat the egg and vanilla with a whisk, and add to bowl with butter/sugar mixture.
Mix in the yogurt, then flour and baking soda and mix on low speed until combined.
Fold in the chocolate chips and spoon fill muffin tins about 3/4 filled.
Bake at 375° for 20-25 minutes.
